INGREDIENTS
- 10 chicken wings
- oil for deep frying
Seasoning Mix:
- 1/4 cup butter
- 1/4 cup hot sauce
- 1 dash ground black pepper
- 1 dash garlic powder
Marinate Mix:
- 1/2 cup all-purpose flour
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
For the blue cheese-celery dipping sauce:
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/2 tsp Worcestershire sauce
- 1/8 cup finely diced celery or 3 stalks cut into 2 inches long for dipping
- 1/4 cup crumbled blue cheese (recommended: Cabrales)
- 1 tbsp finely chopped fresh chives (optional)
- Salt and freshly ground black pepper to taste
DIRECTIONS
- In a large bowl mix chicken wings together with the marinate mix until they are evenly coated. Cover the bowl and refrigerate for at least 60 minutes.
- In a small saucepan over low heat, stir seasoning mix and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
- Heat oil in another saucepan. The oil should be just enough to cover wings entirely, an inch or so deep. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.
For the blue cheese-celery dipping sauce:
- Whisk together all ingredients in a medium bowl and season with salt and pepper.
- Cover and refrigerate for at least 30 minutes before serving.
