INGREDIENTS
- One medium size old yellow cucumber, skin on, seeded and quartered
- 1.5 litres of water
- 15 red dates
- 6 dried scallops
- 200g chicken meat/bones
- 1 piece dried cuttlefish
- 1 medium carrot, peeled and chopped
- salt, to taste
DIRECTIONS
- In a soup pot, add all ingredients together. Bring to a boil, then reduce heat and simmer the soup over low heat for about 40 minutes. Add more water if needed. The longer you cook the tastier the soup.
- For best results, keep warm in thermal pot for four hours prior to serving. Season to taste with salt.
- Serve in a bowl and enjoy.
