Romaine Pear Walnut Chicken Salad



Serves: 3-4

Cook Time: 15 mins


INGREDIENTS
  • 1 head romaine lettuce, dried, and cut in bite-size pieces
  • 3 Ya pears or white pears, peeled, seeded and cut into cubes, tossed in lemon water
  • 1 apple peeled, seeded and cut into cubes, tossed in lemon water (optional)
  • 1/4 cup pomegranate seeds (optional)
  • 1/4 cup walnuts, chopped
  • 1/4 cup balsamic vinegar
  • 1 tbsp parmesan cheese powder
  • 250g boneless chicken thigh
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbsp olive oil

DIRECTIONS

  1. Season chicken meat with salt, pepper and olive oil.
  2. In a pan with medium heat, fry chicken meat till browned and cooked. With a fork and knife, tear the chicken meat into strips.
  3. In a big bowl, toss all the ingredients together.
  4. Serve in a bowl and enjoy.
