All About Onion (Types, Store, Cuts, Plant)

How to Select Onion

Dry bulb onions should be firm for their size and have little to no scent. Avoid bulbs with any cuts, bruises, or blemishes. When purchasing whole peeled onions, select ones with an outside layer that does not show signs of being dehydrated. Fresh-cut onions should be purchased before the expiration date.

How to Store Onion

The best way to keep onions is to store them in paper bags with punched holes. These will last the longest in a dark, cool (but not cold), dry storage area. It's important not to crowd them. Air needs to circulate around the bags--that's the whole point of punching the holes. This punched paper bag method should extend the life of onions, garlic, and shallots in most situations. However, their specific life may vary depending on the temperature, humidity, and light conditions where the bags are stored. Onions should not be stored for an extended time in the refrigerator because the cold temperature will soften their texture; plus, onions will impart their flavor on surrounding produce.
Whole peeled onions should be refrigerated after purchasing. Cut onions can be stored in a sealed container for up to 7 days.
No plastic bags: Don't ever store onions in plastic bags. That will accelerate sprouting and spoilage because of the lack of air circulation.
No potatoes nearby: Potatoes and onions should not be stored together. They give off gases that will accelerate spoilage of each other.

How to Cut Onion Without Crying

Chill the onion in the freezer for at least 15 minutes before cutting them. This reduces the amount of the acid enzyme released into the air and has zero effect on taste. This was found to be the most effective way to reduce tears by the television program Food Detectives. The fridge can do it, too; just make sure not to keep them next to apples or potatoes, or leave them in there for too long (20 minutes should do it) -- they can cause odors if you do.

Can I Eat Sprouted Onions?

If it has just started sprouting and the texture hasn't changed much, it's fine to eat. If it has sprouted a lot, sit it in the window in a cup of water for a couple of days, and you've got a decent substitute for green onions.
