Old Yellow Cucumber Soup




Serves: 2
Prep Time: 15 mins
Cook Time: 40 mins


INGREDIENTS

  • One medium size old yellow cucumber, skin on, seeded and quartered
  • 1.5 litres of water
  • 15 red dates
  • 6 dried scallops
  • 200g chicken meat/bones 
  • 1 piece dried cuttlefish
  • 1 medium carrot, peeled and chopped
  • salt, to taste


DIRECTIONS

  1. In a soup pot, add all ingredients together. Bring to a boil, then reduce heat and simmer the soup over low heat for about 40 minutes. Add more water if needed. The longer you cook the tastier the soup.
  2. For best results, keep warm in thermal pot for four hours prior to serving. Season to taste with salt.
  3. Serve in a bowl and enjoy.
