Juicy Roast Chicken

It was our wedding anniversary last night. My hubby has been thinking to roast a chicken for our dinner. This was his first try out. The roast chicken came out tender, juicy and delicious. He said next round, he will bake a bigger chicken. It was not enough for his tummy. :)

Prep Time: 30 mins
Cook Time: 1 hour 45 mins


INGREDIENTS

  • 1kg  whole chicken
  • 1 celery stalk, cut into 5cm length
  • 1 onion, sliced into 4 pieces
  • 1 small pumpkin, cut into wedges
  • 2 small potatoes, cut into wedges
  • 1/4 cup brown onion, minced
  • 1/3 cup melted butter, divided
  • 4 tbsp Italian herbs, divided
  • 6 cloves garlic, minced, divided
  • 3 tbsp olive oil or more
  • salt and pepper to taste


DIRECTIONS

  1. Preheat oven to 180°C.
  2. Place the sliced onion at the bottom of the dish, under the chicken. Arrange pumpkin and potatoes wedges at the side of chicken. Sprinkle Italian herbs, olive oil, salt and pepper to pumpkin and potatoes. Mix well.
  3. Place chicken in a roasting dish, season inside of chicken with salt, pepper, butter, minced onion and Italian herbs. Stuff the celery stalks into chicken cavity. Season outside of chicken generously with salt, pepper, butter and Italian herbs.
  4. Bake in oven for 1 hour and 45 minutes till cooked.
  5. Let it rest for 10 minutes and serve. Enjoy.
