INGREDIENTS
- 3 plantain bananas (yellowing and not too soft), thinly sliced
- cooking oil for frying
Dipping mix:
- 1/2 ripe avocado, mashed
- 1 small shallot, finely minced
- 2 tbsp heavy cream
- salt to taste
DIRECTIONS
- Mix all dipping ingredients in a small bowl. Keep it in refrigerator.
- In a wok or saucepan, heat cooking oil on medium high.
- Add in banana slices one by one. Do not overcrowd the wok. Make sure all slices are covered in oil. Let it fry until the side start to brown. Turn the slices over for a minute.
- Take out and drain on paper towel. Repeat for remaining banana slices.
- Let cool for 5 minutes and serve with avocado dipping.
