Easy Homestyle Fried Rice

Cook Time: 10 minutes


INGREDIENTS


  • 400g cooked long-grain rice (refrigerated overnight or at least 2 hours)
  • 350g chicken, or meat of choice (marinate with salt and pepper) or luncheon meat
  • 2 eggs, beaten with 1 tsp light soy sauce
  • 1 1/2 cup frozen mix vegetables, thawed
  • 1-2 tbsp cooking oil
  • 5 cloves garlic, minced
  • 5 shallots, peeled & finely chopped
  • 1 tbsp light soy sauce or more to taste
  • 2 tsp oyster sauce



DIRECTIONS



  1. When wok is hot add about 1 - 1.5 tbsp oil, spread oil around the wok. When almost smoking hot, add in the egg spread it evenly to form a thin omelette. Brown on one side, flip over and break the omelette into small bite size with turner. Remove and set aside.
  2. Heat oil, stir fry shallots and garlic until the shallots are translucent.
  3. Add rice and using the back of the spatula or turner, break up all the rice lumps. Add light soy sauce, oyster sauce, meat and thaw vegetables. Stir fry until everything is evenly mixed.
  4. Add cooked egg and mix well. Ready to eat.
